Broccoli Soup

Ingredients
1-2 bunches of broccoli - not frozen
Salt
Pepper
Olive Oil
Parmesan Cheese
Directions
Chop broccoli and place into saucepan with boiling water.
Boil until bright green in color.
Remove broccoli - KEEP water!
Place broccoli into a blender and add 1 cup of water.
Blend.
Add water until desired soup thickness.
Salt and Pepper to taste.
Pour into bowl and top with parmesan cheese and a swirl of olive oil.

I love this soup...so simple and easy, plus it's pretty too.
