Meatball Ingredients
1 onion - minced
bundle of green onions - chopped
1 egg
1 Tbsp minced/grated ginger
1 Tbsp minced/crushed garlic
1 lb of ground meat (pork or chicken)
Broth Ingredients
5 cups of Dashi broth
4 Tbsp Soy Sauce
4 Tbsp Sake or Rice cooking wine
5 Tbsp Mirin
1 Tbsp Fish Sauce
Vegetables
6 1-inch sliced ginger
Preferred Garlic
Sliced Leeks
Carrots - chopped
Daikon - chopped
Cabbage / Bok Choy / Pak Choy - roughly chopped
Directions
Combine broth ingredients and bring to a simmer.
Combine meatball ingredients.
Shape meat mixture into small meatballs and gently drop into broth.
Do not stir!!! Meatballs will fall apart if you stir too soon.
Prep veggies and add to broth after meatballs have cooked.
Cook to desired tenderness.

Additions
I add pan fried dumplings to my soup! My favorite to add is a pork and coriander frozen dumplings. If you want to be fancy you can make your own. I've used my egg roll recipe to make dumplings and they turn out great!
