Microwave Mochi in Minutes

Ingredients
1/2 cup Mochiko or glutinous rice flour.
1/4 cup white sugar.
1/3-1/2 cup water
Few drops of lemon juice
Red (adzuki) bean paste
Tapioca starch for coating
Directions
Combine flour, sugar, water and lemon juice into microwave safe bowl until smooth.
Microwave 1-2 minutes until firm.
Allow to cool for 5 minutes.
Remove mochi from container into tapioca starch covered surface.
Cut into pieces and place adzuki paste onto mochi and seal edges.
Enjoy!!!
