Tomato-Basil-Garlic Sauce

Ingredients

6-8 garden fresh Tomatoes - chopped

1 Onion - chopped

3 Tbsp minced Garlic

3 Tbsp Olive Oil

2 cups fresh Basil - roughly chopped

5-6 springs Thyme

10-15 leaves fresh Sage

Salt and Black Pepper to taste

Red Wine - splash

2 Tbsp Brown Sugar

Additional water if necessary


Directions

Saute onions and garlic in olive oil until onions start to go translucent.

Add tomatoes and simmer for 10 minutes.

Add herbs (except Basil) and seasonings. Simmer for 5 minutes.

Add wine and sugar. Simmer for 5 minutes.

Add Basil and reduce heat to low.

Taste and adjust seasonings if needed.

If you don't like chunky sauces, pour into blender or crush with potato masher.
