Namasu - Pickled Veggies

Ingredients
Daikon - thinly sliced
Carrots - thinly sliced or store bought carrot sticks
Ginger - sliced 1 inch rounds
Cucumber - thinly sliced
Onion - thinly sliced
Rice Vinegar - depends on amount of shredded veggies.
Sugar - depends on amount of shredded veggies.
Salt - depends on amount of shredded veggies.
Water - depends on amount of shredded veggies.
Directions
Prep all vegetables. (I sometimes do just carrots, ginger and daikon or carrots, onions, cucumber and ginger.)
Place into bowl.
Combine 3 parts rice vinegar and 1 part water with 1 Tbsp Sugar and 1 tsp salt. I alter the quantity of sugar and salt based on the amount of veggies.
Pour mixture over shredded veggies.
Serve or store in jar.
