Pa's Spaghetti Sauce and Meatballs

Sauce Recipe
Ingredients
3 regular cans of petite diced tomatoes
10 cloves garlic - chopped
Olive Oil - enough for sauteing
2 Tbsp dried Basil
1 Tbsp dried Oregano
1 Tbsp Onion powder
Red Pepper flakes to preference
1 tsp Baking Soda
3 Tbsp Brown sugar
Salt and Pepper to taste
1 sweet onion - chopped
Directions
Saute onions and garlic in olive oil
Add tomatoes and seasonings/herbs.
Add baking soda and sugar.
Taste and adjust seasonings as needed.

Meatball Recipe
Ingredients
1 lb ground pork
1 lb italian sausage
1 lb ground beef (80% meat, 20% fat)
1 onion - chopped
3 eggs
Italian bread crumbs - no amount specified "Until it feels right," said Pa.
Seasonings: Basil, Oregano, Onion powder, Red pepper flakes, 1 cup fresh chopped parsley, salt and black pepper. No amounts specified...
1 "glug" of milk
1/4 cup hot water
Directions
Preheat oven to 350° F.
Combine all ingredients into a bowl and combine.
Form into meatballs and place onto parchment-lined baking sheet.
Cook for 10-20 minutes.
