Robyn's Nontraditional Rotkohl (Sweet and Sour Cabbage)

Ingredients

2 Tbsp butter

2 apples - diced (your preference for type and whether peeled or not)

1 large onion or 2-3 small - sliced or roughly chopped

2 lbs red cabbage (half a head) - thinly sliced

1/4 cup apple cider vinegar

1 cup apple cider or apple juice

(I have made this without apple juice and instead used 1/2 cup apple cider vinegar with a little water and increased the sugar to taste)

1/4 cup white sugar

1/2 tsp salt

1/4 tsp pepper


Directions

Melt butter in large pot on medium low heat.

Add chopped onions and sweat. Increase heat to medium.

Add in chopped apple and cabbage. Stir well and cook for 5 minutes with lid on.

Add wet ingredients and cook for 10-15 minutes with lid on.

Stir every few minutes to avoid burning. Cabbage will start to reduce in size.

Add seasonings. Adjust to taste.

Continue cooking with lid off until most of liquid has been cooked off.

Serve with a beautiful brat or choice of sausage.
