Roma Tomato Spaghetti Sauce

Ingredients

5-6 Roma tomatoes

3 cloves of garlic - minced

1/2 onion - chopped

1/4 cup water

1/2 red bell pepper - chopped

8 oz of meat of choice

3 Tbsp Olive Oil

Italian seasoning, parsley, sage, salt and black pepper to preference

Splash of red wine - not necessary, but recommended.

1 Tbsp brown sugar


Directions

Saute onions and garlic in olive oil.

Add meat and cook until meat is nearly cooked through.

Add tomatoes and seasonings and cook until tomatoes start to break down.

Add bell peppers - can add earlier but I like mine to still have a little crunch.

Add wine and sugar.

Simmer for 5-10 minutes and adjust seasonings as needed.

 

If using a sausage, I cook the meat and peppers on the side to prevent overcooking.
