Sofritas - New Zealand Style

Ingredients

1 block extra firm tofu

1 tsp neutral oil

1 can pinto beans

1 can diced tomatoes with chili and spices (NZ doesn't have peppers to make an adobo sauce)

Fresh cilantro (coriander) - chopped

1 Tbsp minced garlic

1/2 - 1 cup chopped bell peppers and onions

3 Tbsp Taco Seasoning (see recipe under "Sauce and Seasonings" category)

1 Tbsp tomato paste - optional

Add Chipotle peppers or any pepper (I have not found any in NZ)


Directions

Drain tofu and cut into slices.

Heat pan with oil and fry up tofu.

As the tofu cooks, break the tofu into smaller pieces.

Add can of spicy tomatoes, garlic, pinto beans, bell peppers, onions, and taco seasoning.

Walter said he wanted more tomato flavor, so I added tomato paste and 1/3 cup of water.

Add cilantro and mix all ingredients until tofu is well-coated.

Cook until most of the moisture is cooked off.

Serve with tortillas, cheese, lettuce and sour cream.
