Walter's Favorite Spaghetti Sauce

Ingredients

2 cans diced tomatoes

2 Tbsp minced garlic

3 Tbsp brown sugar

1 medium onion - chopped

2 Tbsp italian seasoning

4-5 fresh Sage leaves - chopped

1 Tbsp Sambal Olek (chili garlic paste)

Preference of Salt and Pepper

Splash of red wine

5-10 fresh Basil leaves - thinly sliced

1-2 Tbsp Oil - your preference for type


Directions

Heat oil in high sided pan.

Add onions and garlic - heat until semi-translucent.

Add tomatoes, sugar, italian seasoning, Pepper, and Sage leaves.

Simmer and stir occasionally.

After 5-10 minutes of simmering, taste. Add salt and sambal olek to preference.

Take masher (potato, avocado, etc) and gently crushed the tomatoes chunks that have not reduced down.

Stir and add splash of red wine - approximately 2 oz.

Taste and add seasonings based on preferences.

Turn off heat and add in thinly sliced basil to sauce. If added during cooking process, can become bitter.
